Welcome to Phat Olive!
My wife Jill and I were beyond excited to become the new owners of Phat Olive in July of 2020. We are committed to continuing the dedicated efforts and values brought to the business by founder and family friend, Tom Schassler. Phat Olive has been a family run business with a strong dedication to the community. We have an abundance of family support who you’re sure to see a few of them helping us out around the store!
We have seen Phat Olive grow from the very beginning and have always been fascinated by the different flavors and benefits the products offered. We fell in love with the small-town ambiance and community pride that Katonah has to offer. Our main goal is to provide high quality olive oil and vinegars and welcoming customer service.

I personally come from different backgrounds but have always had a love for food and working with people. After becoming unemployed due to COVID, I was able to re-spark my creativity in the kitchen. When this Phat Olive opportunity presented itself, we knew we could not pass it up.
As for Jill, she is a guru in everything Social Media, Marketing and Design. She has a BFA in Graphic Design and works full time as a Sr. Graphic Designer for commercial real estate. Be sure to say hi on Instagram!
My mother, Maria, who has been a major help, established MID Resources Inc over 20 years ago and has a tax and accounting office on the Upper West Side and a second location in Croton on Hudson. She's amazing at what she does and knows all of the in and outs of running a business. She helps us to smoothly run the back-end and not to mention she puts together a beautiful gift basket for any occasion!
