Dark Chocolate Balsamic Roasted Strawberries with Mascarpone Velvet

Ingredients:

For the Roasted Strawberries:

  • 1 lb fresh strawberries, hulled and halved

  • 2 tbsp Phat Olive Dark Chocolate Balsamic Vinegar

  • 1 tbsp honey or maple syrup

  • 1/2 tsp vanilla extract

  • Pinch of sea salt

    For the Mascarpone Cream:

  • 1/2 cup mascarpone cheese (room temp)

  • 1/4 cup heavy whipping cream

  • 1 tbsp powdered sugar

  • 1/2 tsp vanilla extract

Directions:

Preheat oven to 375°F. In a mixing bowl, toss strawberries with the Dark Chocolate Balsamic, honey, vanilla, and salt. Spread on a parchment-lined baking sheet in a single layer. Roast for 15 minutes until softened and syrupy, stirring once halfway through.

Make the Mascarpone Cream: In a bowl, whisk mascarpone, cream, powdered sugar, and vanilla until smooth and fluffy. Chill until ready to serve.

Spoon roasted strawberries (with their syrup!) into serving bowls. Top with a generous dollop of mascarpone cream. Garnish with shaved chocolate, mint, or crushed nuts if desired.

Excellent over pound cake, waffles, or ice cream too!
